BIT OF JOY | Edible St. Augustine Lighthouse

Remember when we told you about the 15-foot-tall replica of the St. Augustine Lighthouse that HCA Memorial Hospital staff built out of soup cans? The impressive 900-pound sculpture won the HCA South Atlantic Division contest AND was second runner up in HCA Healthcare’s national contest, earning the Jacksonville hospital $15,000 in prize money. The hospital’s win was also a win for local people who need emergency food assistance. Memorial Hospital staff donated all 1,350 cans that made up the lighthouse (worth about $3,400) along with the $15,000 to the St. Johns Food Pantry in St. Augustine.
