Bellwether restaurant in Downtown Jacksonville will be revived under new ownership and management by Pearl Hospitality Group, the company announced.
In a news release, the group said it would reopen the restaurant at 117 W. Forsyth St. with a refreshed menu and the addition of sushi and Asian dining at the Temaki Room, a speakeasy-style concept. Other plans include enhancing Bellwether’s daypart program, in which the dining experience changes as the day evolves from breakfast to brunch to lunch, etc.

Bellwether closed in March 2026 months after founder Jonathan Insetta told the Jacksonville Daily Record the restaurant had been “hanging on a string in Downtown for the last four years, barely making it” due partly to rising costs of ingredients.
